I try maturing fish with HITACHI’s refrigerator but you should not mature fish because I think there is no fisherman in foreign country who is eliminating blood and internal organs quickly and completely from the body and keep low temperature. So please enjoy aging fish when you will travel to Japan!

Note: If you live in Japan, I do not recommend maturing fish after all because HITACHI donot recommend that. If you will try maturing fish and you have food poisning, I and HITACHI will not be responsible at all, ofcourse.
